WHAT ARE MICROGREENS?

Nutrient rich baby green veggies

Microgreens are seedlings grown in soil and harvested right after they grow their first set of mature leaves.. Because they are still in the process of growing, they are packed full of nutrients,. A wide variety of vegetables can be used as microgreens and we are testing and adding more regularly. Each has their own unique taste, often quite flavorful.

 

The most popular varieties are produced using seeds from the following plant families:

  • Brassicaceae family: Cauliflower, broccoli, cabbage, watercress, radish and arugula
  • Asteraceae family: Lettuce, endive, chicory and radicchio
  • Apiaceae family: Dill, carrot, fennel and celery
  • Amaryllidaceae family: Garlic, onion, leek
  • Amaranthaceae family: Amaranth, quinoa swiss chard, beet and spinach
  • Cucurbitaceae family: Melon, cucumber and squash


Their nutrient content is concentrated, which means that they often contain higher vitamin, mineral and antioxidant levels than the same quantity of mature greens.. In fact, research comparing microgreens to more mature greens reports that nutrient levels in microgreens can be up to nine times higher than those found in mature greens.


People can use microgreens in the following ways:

  1. as a garnish for salads, soups, flatbreads, or pizzas.
  2. to add nutritional value to a juice or smoothie.
  3. as a side to any main dish.
  4. to add flavor and color to an omelet or frittata.
  5. as an alternative to lettuce in tacos or a burger or sandwich.
  6. juicing 
  7. stiry fry
  8. and more
